 Baby Gem lettuce with avocado and Parmesan


Salads don't come easier or prettier than this – it's a last-minute job, but is really effortless.

Preparation time: 10 minutes
Serves 8

4 whole Baby Gem lettuces
4 ripe avocados
juice 1 lemon
3 to 4tbsp extra virgin olive oil
Parmesan shavings, to serve

Place the lettuce leaves in a bowl. Halve, de-stone and peel the avocados, then slice and add to the lettuce. Mix the lemon juice and olive oil; season well. Toss the dressing into the salad, then top with the Parmesan shavings.

Per serving: 200cals, 20g fat, 5g saturated fat, 2g carbohydrate

Smart idea: Add cooked chicken to this recipe to make a great main course salad.
