The joy of Christmas plays an absolutely vital role for humankind, writes the nation's favourite cook

This year I'm celebrating 40 years of writing recipes, and because Christmas cooking has been a very large part of 
this, I will be hoping – as always – that everyone who will be following my recipes will be happy. Last year, someone wrote to say my turkey recipe didn't work.

It's been in print for all of those 40 years, but we still re-tested it (on camera for the BBC Christmas programme) and I can safely say that my recipe is all present and correct. So I hope you enjoy it, have a great Christmas, a happy New Year and a happy new decade.
