Cajun chicken drumsticks recipe

Looking for a new way to spice up chicken? Try this simple marinade - great for barbecues

A winner at a barbecue, these are great for feeding a crowd. It’s always better to overcook a drumstick rather than under. This works well with chicken thighs too.

Preparation time: 5 minutes plus marinating
Cooking time: 25 minutes
Serves 4

2 to 3tbsp Cajun spice rub
1tsp fennel seeds
2tsp brown sugar
3tbsp olive oil
8 free-range chicken drumsticks, skin on

1 Place all the marinade ingredients in a bowl and coat the drumsticks well. Marinate for at least an hour, or up to overnight.
2 When you’re ready to cook, remove the drumsticks from the marinade and shake off any excess. Cook on the hottest part of the barbecue for 20 to 25 minutes, turning occasionally. Serve the drumsticks with lots of napkins!


Per serving: 320 calories, 19g fat (4g saturated), 2.5g carbohydrate

w&h tip: If you’re worried about under-cooking drumsticks, start them off in the oven for 20 minutes or so then finish them on the barbecue.
