The classic burger recipe
Simple to make and utterly delicious – you’ll never want to buy ready-made burgers again.

Serves 4
450g (1lb) minced beef
1 small red onion, very finely chopped
1 garlic clove, crushed
2tbsp sun-dried
tomato paste
4tbsp chopped fresh parsley
To serve
4 crusty rolls
a couple of handfuls of salad leaves
tomato relish
1 Place all of the burger ingredients in a bowl, season well and combine. Divide into four and shape each quarter into a thick patty. Heat a large, non-stick frying pan and add the burgers.
2 Cook over a medium heat for about 10 minutes, turning once until browned and cooked through. Split the rolls, add a handful of salad leaves and top each with a burger. Spoon over a little of the relish and serve.

There are so many ways of adding exciting new flavours to burgers – once you get experimenting there’s just no stopping! Here’s how to get a taste of the Med.
Make up the classic burger mix as in the recipe above but using just 1tbsp of the sun-dried tomato paste. Add 2tbsp chopped fresh thyme along with 3tbsp black olive tapenade and 150g (5oz) crumbled feta. Shape into patties and cook as before. Serve on toasted ciabatta instead of crusty rolls and taste that Mediterranean sunshine in every bite.
