Thyme-Griddled Halloumi Recipe


Halloumi cheese and barbecues are a match made in heaven – and it tastes even better with our simple citrus marinade.

Preparation time: 10 minutes, plus 45 minutes marinating
Cooking time: 5 minutes
Serves 4

250g (9oz) Halloumi cheese, cut into thick slices
2tbsp olive oil
zest and juice 1 lemon
2tbsp chopped fresh thyme

Place the Halloumi cheese in a shallow, non-metallic bowl and add the remaining ingredients. Season with a little freshly ground black pepper and allow to marinate for between 30 minutes to 1 hour. Cook on the barbecue for 5 minutes until lightly charred, then serve hot with our herbed couscous salad (see recipe search).

Per serving: 206cals, 18g fat, 9g saturated fat, 1g carbohydrate
