Summer vegetable broth recipe

A gem of a soup. Fat-free and delicious, it makes a filling meal, snack or starter.
Preparation time: 15 minutes
Cooking time: 20 minutes
Serves 4 (generously)
1.2 litres (2pts) vegetable stock
2 leeks, finely sliced
1 onion, finely chopped
3 carrots, diced
3 sticks celery, sliced
2 courgettes, diced
4tbsp chopped fresh flat-leaf parsley
1tbsp fresh thyme leaves
Put a few spoonfuls of stock in a saucepan, then cook leeks and onion until soft. Add carrots and celery and cook for 5 minutes. Add remaining stock and courgettes, bring to boil and simmer for 10 minutes. Stir in herbs.
Per serving: 75cals, 1g fat, 0.2g saturated fat, 13g carbohydrate
Tip: To bulk this soup out for lunch or dinner, add cooked brown rice or lentils.
