Poached oriental chicken recipe
A delicious, Eastern-inspired dish which will help you to lose weight quickly.

Preparation time: 10 minutes Cooking time: 15 minutes
Serves 2
1.2 litres (2pts) chicken stock
1 stick lemongrass, bruised and halved
1 knob ginger, peeled and chopped
5tbsp tamari (wheat-free soy sauce)
2 skinless boneless chicken breasts, sliced
75g (3oz) shiitake mushrooms, sliced
1 large courgette, sliced
1 bunch spring onions
good handful each of pak choi and choi sum (Chinese leaves)
handful chopped fresh coriander
small bunch chives, finely snipped
Put the stock, lemongrass, ginger and tamari into a large saucepan and bring to the boil, then simmer. Add the
chicken, cook for 5 minutes, then add the mushrooms and courgette. Simmer for 3 minutes, then add the spring onions and Chinese leaves - if they are very long, tear or chop. Simmer until wilted, then add the coriander and chives to serve.
Per serving: 223cals, 4g fat, 1g saturated fat, 10g carbohydrate
Tip: Add some chopped red chilli for more of a kick. You can eat this for lunch with soba (buckwheat) noodles, which you can cook in the stock with the chicken.
