Poached salmon on summer greens recipe

Serves 2
2 x 150g (5oz) fillets salmon
500ml (18fl oz) vegetable or chicken stock
few mint sprigs
150g (5oz) fine green beans
200g (7oz) asparagus, halved lengthways
100g (4oz) broad beans
1 bunch spring onions
75g (3oz) peas
1tbsp capers, rinsed
drizzle of extra virgin olive oil
You will need a sauté pan
Place the salmon in a sauté pan, add the stock and a sprig of mint, bring to the boil. Simmer for 5 minutes or until the salmon is cooked. Reserve 4tbsp stock for later.
Steam the green beans and asparagus for 2 to 3 minutes, then add the broad beans, spring onions and peas. Steam for a few minutes, then double pod the broad beans.
Put all the vegetables in a saucepan with 4tbsp poaching stock, add the capers, heat through and serve with the salmon.
Drizzle over a little oil and freshly ground black pepper.
