Energy bar recipe

A perfect portable breakfast recipe or a great snack with coffee or afternoon tea

Preparation Time: 5 minutes
makes 16

150g (5oz) butter
75g (3oz) light muscovado sugar
3tbsp honey
250g (9oz) organic oats
175g (6oz) dried apricots, chopped
50g (2oz) pecan nuts, chopped
You will need a 30x20x4cm (113/4x8x11/2in) baking tin lined with baking parchment

Preheat the oven to 180 C, 160 C fan, 350 F, gas 4. Melt the butter, sugar and honey in a pan until it has all dissolved. Mix everything together, put into the tin and level with a spoon. Bake for 20 to 25 minutes or until golden. Cool for 10 minutes then cut into squares and leave in the tin. Will keep for 3 days in the fridge in an airtight container.

Each bar: 179 cals, 11g fat, 5g saturated fat, 19g carbohydrate
