Dine in with Nigel Slater

Nigel Slater talks about his love for vegetables and shares some of his recipes

Nigel Slater is a national treasure, a cook who writes, quite brilliantly, on simple food sourced with care. He has the rare gift of inspiring you to cook through his writing alone.

Since he developed his own back-garden plot, vegetables have become Nigel's new food heroes.

"When you peer into my pots, it is the veggies that play the starring role," he says. "Cooking with vegetables you have grown gives you the chance to experience a profound respect for an ingredient. Vegetables beckon and intrigue in a way no fish or piece of meat ever could."

Here Nigel shares with you delicious recipes from his new book Tender Volume 1: A Cook And His Vegetable Patch.

Baked marrow, minced pork

Root vegetable kormas

Baked aubergines with thyme and cream

Tender Volume 2: A Cook's Guide To The Fruit Garden will be published in autumn 2010.
