July is one of the most plentiful times for British food, and when nature provides, it’s only right that we eat! Iced tomato and basil soup recipe
Cool, refreshing and so simple, look for dark red, fragrant tomatoes to put into this soup. The slightly bruised, ripe tomatoes at the greengrocers can usually be snapped up cheaply, and are perfect for cooking.
Chicken saltimbocca recipe
Although this one is made with chicken, saltimbocca is traditionally done with veal. Now British rose veal has such a good reputation, we really should be making the most of it. The courgettes and green beans in the side dish will be at their most flavourful too.
Raspberry and meringue cake recipe
There really isn’t anything better than the sharp juicy tang of a raspberry eaten with crunchy, chewy meringue. If you add cream into the equation, you really are very close to food heaven! Insist on British raspberries – the slow ripening process gives the sugars more time to develop, making them infinitely superior to those from abroad.
