Bank holiday recipes

  • Jane Curran

Need the perfect summer menu? Try these easy recipes this bank holiday weekend - ideal for entertaining friends indoors or outdoors

We’re not holding our breath for a sunny Bank Holiday weekend so I’ve come up with a main course that you can cook in the oven or on the barbecue. This delicious lamb can be prepared and marinated the day before cooking so saves time. Serve it with seasonal broad beans and garlic and I would just put some new potatoes in the oven with a little rosemary and garlic and some olive oil. They’ll take about 45 minutes in a hottish oven.

To kick off, keep it casual with some guacamole to graze on, perhaps with a glass of rose? For pud, Elizabeth David’s syllabub is perfect with fresh raspberries which are plentiful at the moment. Whatever the weather, have a great Bank Holiday!
